Typography and how to adjust typography from within Photoshop was brought up during our weekly meeting Tuesday. Almost if on cue, Psdtuts+ (http://psd NULL.tutsplus NULL.com/) as part of their Photoshop Basix (http://psd NULL.tutsplus NULL.com/sessions/photoshop-basix/) series released a video tutorial on this very subject. The tutorial focuses more on the keyboard shortcuts than the panel commands, but I think you’ll find the keyboard shortcuts to be far more intuitive.
